In a recent social media video featuring many of our southern themed canvases, I mentioned this recipe while showing off a bananas foster canvas, and so many of you reached out to hear more about it, so I'm delivering on that promise!
This is a recipe Julie found many years ago and has made it a staple in her baking repertoire. It's easy, delicious, and is an ode to the dessert New Orleans (one of her favorite places) is known for.
Once, when preparing to host a spa party at her house, she made this cake, but had a little slip when transferring the cake from the pan. This little snafu resulted in a crack she couldn't seem to cover in order to serve an aesthetically pleasing cake, so she improvised. In a moment of genius (she has a lot of those), she crumbled the cake and layered it in a trifle dish with french vanilla pudding and the Bananas Foster Crunch Cake Trifle was born!
Today, we're starting with just the cake recipe, though. I hope y'all enjoy it as much as we do!

Bananas Foster Crunch Cake
1/2 cup butter or margarine (softened)
1 1/2 cups sugar
2 large eggs
2 cups mashed bananas (about 4 medium)
1/4 cup dark rum
1 tsp vanilla flavoring
1 1/2 cups all purpose flour
3/4 cup cornmeal
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
TOPPING:
1 cup all purpose flour
2/3 cup chopped pecans
1/3 cup firmly packed brown sugar
1/2 cup butter or margarine (melted)
Topping: Mix together and set aside.
Beat butter until creamy. Gradually add sugar, beating well.
Add eggs, one at a time, beating well after each addition. Stir in mashed bananas, rum and vanilla flavorings. Combine 1 ½ C. flour and next four ingredients. Add to butter mixture, mixing until blended.
Pour half of cake mixture into a greased and floured tube pan. Top with half of topping mixture. Pour rest of cake mix and top with remaining topping. Bake at 350 degrees for 55 minutes or until toothpick inserted in center comes out clean. I've also topped it with a powdered sugar and milk glaze.
